I am Luca Galli, and for me, and for my whole team, that enrichment has become one of the most vivid chapters of our cooking at Ristorante La Pòsa.
Over the past few years at La Pòsa, the restaurant within Hotel Flora, I have worked side by side with Antonio, our Head Chef, and with the team, to refine a vegan offering that brings the principle of Natural Detox, so central to the Flora's hospitality, into the kitchen as well.
I didn't do it to tick a box, or to follow a trend. I did it because our Alpine cooking lives by a simple principle: respect for the raw ingredient. And when you truly place the ingredient at the centre, the wild herbs, the local vegetables, the ancient grains, the shoots that spring offers up, you discover that plant-based cooking is not subtraction. It is an expansion of flavour.
The vegan tasting menu at La Pòsa is a sequence of dishes that are balanced, creative and deeply rooted in the Valtellina. I have never thought of them as the vegan option, but as creations anyone would choose for the pleasure of it, for the curiosity of flavours that rises the moment you read the menu.
The mountains hold an extraordinary larder. True, the first thing that comes to mind is perhaps the milk and cheeses of the high pastures, but there is another story, just as old, made of roots, leaves, flowers and tubers. It is the cooking our grandmothers practised every day, even when bringing meat to the table was a luxury.
In the kitchen at La Pòsa we always work with the seasons, and the vegan tasting menu follows the same rhythm, the most natural rhythm of all.
Whoever sits down at La Pòsa and chooses the vegan tasting menu is about to discover something. The mountains, told in a new way; plant-based cooking, revealed in all its flavour.
